Guilty Free Fruit energy cake
This is a fantastic energy boost for your rides or at any time of day and it tastes delicious

This cake is also ideal for vegans and totally guilt free as it is free from Fat, refined sugars and all dairy, including eggs.
Ingredients
300 ml Water
80ml Orange Juice
250g Chopped, stoned Dates
450g chopped, Dried fruits, these can be a combination of anything - cherries,, prunes, sultanas, but Apricots should always be added for flavour and tanginess
50g Walnuts, chopped
90g Plain Flour 90g Wholewheat flour
3 tsp Baking Powder
1 tsp mixed spice or cinnamon

Method
.Heat the dates and the water to boiling in a large saucepan and leave to cool while preparing the other ingredients.
.Except for the orange juice, mix the other ingredients together.
.Add the orange juice to the dates and stir well.
.Add everything else and stir really well, but gently to avoid the fruit disintegrating.
.Put the mixture in a lined loaf tin or tray bake and smooth the top with a spoon.
.Bake at 170 degrees C for about 40 - 50 minutes.
.Leave in tin for about ten minutes then turn out on a wire rack to cool and cut into small bite size pieces ready for your next ride.
